Stuffed Mushrooms With Cream Cheese And Sausage

Most people seem to go crazy for mushrooms filled with cheese, sausage, crab, lobster, pesto or any filling they can think of when they see them at a party.

I prepare mushrooms all the time; I stuff them, sauté them for steaks and burgers, and grill portabellos.    

I enjoy creating mushroom meals because my spouse and family enjoy them. I simply don't want to consume them.  

I've been teaching myself for the past few years to at least attempt them. I especially enjoy foraging for morels, chicken of the woods, and chanterelles. 

Mushrooms were one of the first recipes I made from my first adult cookbook, The Good Housekeeping Illustrated Cookbook (about 1980), which I still own today.  

It is actually falling apart, but I appreciate it dearly.  It reminds me of my favourite old trousers, a childhood stuffed animal, or one of my greatest childhood buddies.  I'll keep it forever!  

This is a simple recipe in my perspective, and everyone enjoys it whenever I serve it.
