Ingredients 

– 1/2 teaspoon vanilla extract – 1/4 teaspoon ground cinnamon – Pinch of salt – Sliced bananas, for topping – Crushed graham crackers, for topping – Whipped cream or Greek yogurt, for topping (optional)

In a mixing bowl or jar, combine the rolled oats, mashed banana, Greek yogurt, milk, chia seeds, honey or maple syrup (if using), vanilla extract, cinnamon, and salt. Stir until well combined. 

Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and soften. 

Before serving, give the oats a stir to ensure everything is evenly mixed. If the mixture is too thick, you can add a splash of milk to reach your desired consistency. 

To serve, divide the overnight oats into bowls or jars. Top with sliced bananas and crushed graham crackers. 

Optionally, you can add a dollop of whipped cream or Greek yogurt on top for extra creaminess and garnish with additional cinnamon or a drizzle of honey, if desired.
